Collagen Banana Bread

This collagen banana bread is quick and easy to make, for a protein filled start to even the busiest of mornings. 

  • @simplemills grain and dairy free banana bread dry mix.
  • Add 2 scoops  Vital Proteins original collagen peptides, and blend well. If you're feeling daring consider including about a 1/8th tsp of cinnamon and a dash of cardamom-- a little goes a long way, but tastes extra special! 
  • Mix requires 3 eggs, 1/2 cup water and 2tbs coconut oil- whisk to blend well well, and then fold in with the dry mix. 
  • Pour into a lightly greased loaf pan (I used @fourthandheart vanilla bean ghee and it is 🔥) and top with a half banana. Bake according to box instructions (about 45 minutes or until a toothpick comes cleanly out of the middle), and cool on a wire rack. 

I will usually make this on a weekend and have it for breakfast most days of the rest of the week. It's incredibly versatile, and pairs well with whatever fresh fruit you have around (I tried raspberries and black figs here) as well as nut butters, coconut chips and chia seeds.
