Care / Of Chocolate Cold Brew + Double Chocolate Cookie Dough Bites
Was so excited to work with @careof on the launch of their brand new protein powders and superfood boosts (#careofpartner). I was always one of those “protein skeptic” people whenever someone would talk about being vegetarian. Like, “if you don’t eat meat, where do you get protein??!” And “well, I’m an athlete, I could never be vegetarian”. More than 9 months into a primarily plant based diet, I’m rolling my eyes so hard at past Maggie that they are almost stuck in my head. Starting with my YTT in Bali and every day since, I have loved learning how to fuel my body with plants. As much fun as I have had learning to restructure my meals and get creative in the kitchen, the one thing I have struggled to find a good replacement for is protein powder; everything tasted vaguely like grass, or been full of sort of shady ingredients I can’t pronounce. As someone who doesn’t always have time to cook extravagant meals and who wants to be sure I’m covering my nutritional needs even when I’m on the go, it’s been kind of a bummer! UNTIL NOW.
I have been taking #careof vitamins since 2017, and love their honest, science-forward approach to transparency in sourcing, efficacy and ingredients, so it was extra exciting to see them take the same approach to the protein and supplements aisle. After taking the new online quiz to identify my nutritional needs and goals, I grabbed the chocolate plant-based protein. Made with pea, pumpkin seed and hemp proteins and with 18g protein per serving, it’s perfect for boosting up a breakfast smoothie or a quick refuel and recovery option after a workout. My current favorite is a tie between a cold-brew mocha and double chocolate maca cookie dough bites so I thought I would share them both with you!
Cold Brew Mocha Recipe:
This is literally one of the easiest recipes of all time, because it’s exactly what it says it is;
8-10 oz your favorite cold brew coffee concentrate (I make mine with a cold brew coffee pot and have all my amounts memorized, but NYT Cooking has a super easy recipe)
1 scoop CareOf Chocolate Plant Portion Powder
Combine protein and cold brew in a blender until frothy; pour over ice and ENJOY. (when I’m feeling wild I’ll blend the ice + a little bit of almond milk for a chocolate mocha frosty situation). Feel free to use just regular iced coffee if cold brew doesn’t sit well with you (or if you don’t have 12 hours to wait for it to be done!)
Double Chocolate Maca Cookie Dough Bites
2 scoops Chocolate Plant Protein Powder
1 Care Of Maca Booster Packet
1 cup flour alternative (I used almond flour!)
1/2 cup nut or seed butter (I used almond here too)
1/4 maple syrup or honey
1/4 cup dairy free chocolate chips ( I used dark 85% chocolate chips chopped up)
Put protein powder + almond flower + maca packet in a mixing bowl: combine.
Add in the nut/seed butter, sweetener and mix - batter should have a similar consistency to cookie dough, so if it seems dry add more honey/maple syrup.
Add in the chocolate chips; mix to combine.
Use a tablespoon to scoop out dough and roll into bite sized balls - you should be able to make 10-15.
Store in the fridge for 4-6 days and enjoy!
